Low-Carb Sloppy Joes

Another dietdoctor.com favorite. We tried these last night. My favorite part was the bun (not a meat fan), but the kids loved the Sloppy Joes. The down-side of this recipe is you'll have to watch your carbs the rest of the day, but overall, it's keto-approved and quite tasty. I was missing a few ingredients, so I changed it up a bit, but it still turned out good. It called for crushed tomatoes and tomato paste, but all I had was diced tomatoes and tomato sauce. I lowered the amounts I used, as well. I also didn't have any Dijon mustard, so I just omitted it. Didn't seem to make a huge difference. If you cook it as written, it has 14g net carbs, 12g fiber, 79g fat, 51g protein, and 1013 kcal. You can lower these amounts by carefully choosing healthier ingredient options (such as no sugar added tomatoes or omitting the mustard). Anyways, here's the recipe:
Ingredients:
Ingredients for keto buns
2 Tbs olive oil
1 yellow onion (chopped)
4 garlic cloves (chopped)
20 oz ground beef
4 Tbs tomato paste
14 oz crushed tomatoes
1 Tbs chili powder
1 Tbs Dijon mustard
1 Tbs red wine vinegar
2 tsp sea salt
1/4 tsp black pepper
Mayo, cheese (optional for sandwich topping)
Directions:
Bake keto buns as directed
Heat olive oil in large skillet.
Add chopped onion and garlic cloves. Cook a few minutes on med-high heat.
Add ground beef, and brown.
Add the rest of the ingredients and heat on low for 15 minutes, stirring occasionally.
Cut buns in half and add a good-size spoonful of sloppy Joe meat to it. Top with your choice of toppings.
