Keto Buns / Dinner Rolls

Yum... enough said. These keto buns were soft and tasty! This was the first time I ever used psyllium husk powder, and I think I'll start using it more! These were not over-powdered with the almond flour or egg taste, like more keto breads. I was very impressed. I found this recipe on dietdoctor.com. The only "con" is that these take an hour to cook! These have 2g net carbs, 6g fiber, 13g fat, 7g protein, and 170 kcal per bun. I'm not going into a long story about these, so let's cut right to the chase. Here's the recipe:


Ingredients:


  • 1 1/4 cup almond flour

  • 5 Tbs psyllium husk powder

  • 2 tsp baking powder

  • 1 tsp sea salt

  • 2 tsp white wine vinegar (or cider vinegar)

  • 1 cup boiling water

  • 3 egg whites

  • 2 Tbs sesame seeds (optional)


Directions:


  1. Preheat oven to 350*F. Mix dry ingredients while water is boiling.

  2. Add the boiling water, vinegar, and egg whites to the dry mixture.

  3. Beat with a hand mixer for 30 seconds, until a dough ball forms.

  4. Make 6 balls of dough on a greased baking sheet. (You can add the sesame seeds to the tops here, if you are adding those.)

  5. Bake on lower rack for 50-60 minutes. They are done when tapping on the bottom of the bun sounds hollow. If you don't let them cook long enough, they will be gooey inside.

  6. Use them however you want! Bread & butter, hamburgers, or sloppy Joe's! (see photo below)
