How to party on the Keto diet

Can you still entertain for friends and family when you're on the Keto diet? Yes, you can! And it's much easier than you think! See the photo to the right? That is what I served for our friends the other night. And they loved it! (well, at least that's what they told us.) So here's what I made:

Keto chips, wrapped lil smokies, sliced cucumber, cheese, and circled ham, turkey, and pepperoni slices. I served it with a local low-carb salsa I found at Whole Foods Market. It was a nice balance of bready, veggie, cheesy, meaty, and spicy! I think we'll definitely be having this platter for ALL future parties and gatherings, as it serves both Keto AND non-Keto guests.


For the meats, I just opened the packages of regular lunch meat, stacked up the slices, and used a baby bottle lid to cut out the circles. They were the perfect size, like a Lunchable! The cheese wasn't sliced in any particular design, I was getting lazy at that point.



The wrapped lil smokies were actually an idea I came up with after making my Keto Ham & Cheese Hot Pockets. I used the same breading from that recipe, but I cut it into small triangles to wrap up the lil smokies. You can also use that same recipe to wrap hotdogs! The possibilities are endless! I recommend heading over to that recipe and seeing what else you can come up with. Get creative!













The chips were supposed to be like nachos, but they ended up more like pita chips. But I wasn't complaining, because they were awesome! Dipped in the 1g net carb local salsa I bought, these chips were delish!


So, in conclusion, yes, you can entertain friends and family while on the Keto diet. And yes, they will also enjoy your Keto food... unless they have no taste buds. :)



Here's the chips recipe:



Ingredients:


  • 2 cups mozzarella cheese

  • 3/4 cup almond flour

  • 1/2 tsp sea salt

  • 1 tsp chili powder


Directions:


  1. Preheat oven to 375*F.

  2. Melt cheese in microwave-safe bowl.

  3. Add flour, salt, and chili powder. Mix well.

  4. Knead dough, then roll out thin between two sheets of parchment paper.

  5. Use a pizza cutter to cut the thin dough into triangles.

  6. Transfer entire sheet of parchment paper with the dough onto a baking sheet.

  7. Bake 5-8 minutes (don't overcook!) They crisp more while cooling off.

  8. Once chips are desired crispiness, you may serve plain or with dipping sauce of choice.
