Keto Ham & Cheese Hot Pockets

I used to love hot pockets. When I worked out of the home, that was always my go-to lunch, as it was quick and easy. Then I started Keto... but that doesn't change things. I can still enjoy hot pockets! I found a recipe for a keto bread used to wrap around hotdogs, but changed it to ham and cheese, making "pockets" instead of an open-ended wrap. They turned out better than expected! You gotta try them! Here's the recipe:
Ingredients:
- 1/2 cup almond flour 
- 4 Tbs coconut flour 
- 1/2 tsp baking powder 
- 2 2/3 oz butter 
- 1 1/2 cup shredded cheese (I've tried it with cheddar and mozzarella. I prefer the mozzarella.) 
- 1 egg 
- 1 egg for brushing dough 
- ham slices 
- cheese (cheddar or Monterrey Jack) 
Directions:
- Preheat oven to 350*F. 
- Mix almond flour, coconut flour, and baking powder in a bowl. 
- Melt butter and cheese together in a microwaveable bowl, at 15-second intervals to avoid burning. 
- Crack one egg into the butter/cheese mix and stir. Add flour mixture to form a dough. 
- Flatten dough with rolling pin, between two pieces of parchment paper, into a large rectangle. 
- Using a cookie cutter, cut dough into 20 equal pieces. 
- Place a small piece of ham and a little cheese on each piece and wrap it up completely. Any openings may cause the cheese to run out while it is cooking. 
- Crack the last egg in a bowl and whisk. Then brush the egg onto the top of each hot pocket. 
- Place each hot pocket onto a greased baking sheet, and bake for 15-20 minutes. 
- Let cool slightly before eating.
