Keto Pierogis

We might as well have been at a fine dining establishment, because that is what this meal felt like! It was a nice balance of comfort and classy. I've never made pierogis in my life. In fact, I had to use Google a lot to make sure I was making them correctly. But WOW, I was sure impressed with the final product! I think the filling was the best part, a nice creamy, cheesy, garlicky, bacony center was the perfect combination. This recipe serves 4 and only has 7g net carbs! I served them with a small salad, along with my husband's family dressing. If you haven't had Three Diamond Dressing yet, you are missing out! It makes me WANT to eat salad, and I hate salad! Seriously, try it. It's not yet available in the U.S., but give it time. It has become quite popular throughout grocery stores, like Safeway, in Canada. Anyways, here's the recipe for the pierogis:



Ingredients:


Filling-

  • 2 Tbs butter

  • 1 shallot, chopped

  • 2 garlic cloves, chopped

  • 5 oz bacon

  • 2 oz fresh spinach

  • 2 oz parmesan cheese, grated

  • 5 1/3 oz cream cheese

  • 1/2 tsp sea salt

  • 1/4 tsp pepper

Dough-

  • 1/2 cup almond flour

  • 4 Tbs coconut flour

  • 1/2 tsp sea salt

  • 1 tsp baking powder

  • 1 1/2 cups shredded cheese (I used mozzarella)

  • 2 2/3 oz butter

  • 1 egg



Directions:


  1. Saute shallot, garlic, bacon, and spinach in butter. Add salt and pepper.

  2. Lower heat, and add cream cheese and parmesan cheese. Stir and simmer another minute.

  3. Preheat oven to 350*F.

  4. Mix all dry ingredients for dough in a bowl.

  5. Melt butter and cheese together. Crack egg into mixture and keep stirring.

  6. Add dry ingredients, and mix to form dough. Knead.

  7. Separate into 4 equal parts, and flatten using a rolling pin to 7-inch diameter each.

  8. Apply a generous amount of filling onto each piece of dough, then fold and seal edges, using a fork.

  9. Bake 20 minutes, or until the pierogis turn a golden color. Serve with salad.
