Keto French Swedish Whatever Pancakes

This is another dietdoctor.com recipe that I had to share. While the name they give it is "Keto French Pancakes", I can't help but be reminded of the look and taste of the Swedish pancakes recipe from the American Girl Kirsten's cookbook that I used to make when I was a little girl. They serious taste just like them! Except these have probably a tenth of the carbs. Now, these pancakes are not your regular "butter up and pour syrup or berries over them" pancakes. These are more like crepes. You fold or roll your "topping" inside the pancake. I used two different fillings. One was the keto chocolate hazelnut "Nutella" spread I made last week and saved in the fridge (I KNEW it would come in handy!). The other was a local blueberry jam sweetened with agave instead of sugar. I sprinkled a dash of confectioners Swerve on top to finish it off, and possibly the best breakfast ever created was complete. These. were. so. good! This has 4g net carbs per serving and makes 4 servings (Or so it says. I actually made about 6 servings, so the net carbs could be less depending on how many you make.) Now that you know the story behind these, here's the recipe:
Ingredients:
8 eggs
2 cups heavy whipping cream
1/2 cup water
1/4 tsp sea salt
2 Tbs psyllium husks powder
6 Tbs butter
Filling (sugar-free jam or chocolate-hazelnut spread, etc.) - optional
confectioners Swerve - optional
Directions:
Mix all ingredients in a bowl.
Heat skillet to medium-high. Grease with butter if needed.
Pour batter onto skillet until pancake is roughly 6-8 inches in diameter.
Heat each side 1-2 minutes, until golden brown. They are flimsy, so flip carefully!
Immediately add filling, and roll it up or fold in half. Sprinkle with confectioners Swerve if desired.
Enjoy warm! (tip: You can store these in the fridge up to 2 days without filling, reheat before serving.)
